An extraordinary culinary masterclass with Nizam Peeroo and Kristel Froger!

A brand-new experience took place on Saturday, August 26, at the Yuzu restaurant of the Labourdonnais Waterfront Hotel. The renowned Chef Nizam Peeroo teamed up with the dynamic Kristel Froger—food & lifestyle content creator and blogger of L'Atelier de Kristel —for an exclusive culinary masterclass. This event was designed for around twenty Eclosia employees with a passion for food. The atmosphere was both relaxed and electrifying! The two chefs, with vastly different backgrounds, demonstrated how cooking can be an unlimited playground for creativity.
With 40 years of experience, Chef Nizam Peeroo brought his expertise to this unique culinary adventure. Not only did he delight participants with his creations, but he also sprinkled his demonstration with amusing anecdotes, adding a lighthearted touch to the event. His cooking tips did not go unnoticed. "I made sure to note that at high temperatures, powdered saffron, garlic, and mustard turn bitter. And that before cooking eggplant, it should be soaked in salted water with a bit of vinegar," shared an employee from Eclosia’s Head Office.
Kristel Froger, a self-taught enthusiast of Mauritian cuisine, returned to her homeland after 12 years abroad, with the goal of making local flavors accessible to everyone. She shared childhood memories of her mother’s and aunts' cooking, creating a warm and nostalgic ambiance. She awakened everyone's taste buds with her delicious 'soupe de riz', transporting participants back to 'letan lontan'—the good old days when many modest Mauritian households enjoyed this comforting dish in winter, often enhanced with chicken feet. Yes, you read that right! Meanwhile, Chef Nizam Peeroo worked his magic with a mouthwatering banana curry, tender braised heart of palm, and his famous eggplant jam, which set every gourmet’s imagination alight.
The chemistry between these two vastly different culinary personalities created a beautiful synergy, making this masterclass truly unforgettable. It was a meeting where simplicity met sophistication, and the love for Mauritian cuisine came to life under the skilled hands of two culinary masters. An experience no one will soon forget!
